Taken from the loin which goes along the back from the shoulder to the rump. Our rolled loin of pork (without skin) is best-cooked medium for a classic roast.

Also available with skin for crackling.

Heat oven to 220°C/Fan 200°C/Gas Mark 7.

Lightly oil a baking tray and place the pork on top, sprinkling seasoning as required.

Cook in the oven for 20 mins until crisp and browned all over.

Reduce oven to 190°C/Fan 170°C/ Gas Mark 5 and cook for another 45 mins per kg of meat.
