Delicious, wild haunch of venison from Glenisla Estates – boneless, trimmed and rolled. Low in fat, rich in festive flavour!
1. Preheat the oven to 220C/Gas Mark 7.
2. Season the venison haunch generously. Cover the now seasoned haunch in streaky bacon.
3. Place the joint in a large roasting tin and roast for 20 minutes, after 20 minutes turn down the oven to 170C/ Gas Mark 3 and roast for 12 minutes per 500g for medium rare.
4. Remove the meat from the oven and wrap loosely in foil, leaving to rest for 20 minutes.
